Ingredients: 

For the pancakes:

1 pack of Morrisons Free from Yorkshire Pudding and Pancake Batter Mix (free from dairy, egg, wheat, gluten, soya)

1 egg equivalent from an Egg Replacer e.g Ener G egg replacer

250ml dairy free milk alternative e.g rice milk or oat milk depending on your diet restrictions

For fillings:

Dairy free icecream e.g Worthenshaws vanilla

Fresh berries e.g strawberries or raspberries

Optional - chopped nuts

For the sauce:

Either make a chocolate sauce:

Dairy free chocolate e.g Organica swiss (from Waitrose)

dairy free milk alternative

or a berry coulis:

fresh berries

icing sugar

 

 

 

Method: 

1)Prepare the pancake batter according to the pack instructions.

2) Prepare the sauces. For chocolate sauce, simply melt down some chcolate in a bowl over a pan of simmering water. Mix in a little milk until the sauce is the consistency you prefer.  Or to make a coulis, simply put some of your favourite berries in a blender with some icing sugar (to taste) and blend. Then push the sauce through a sieve to remove pips.

3) Cook the pancakes in a frying pan. You can keep them warm by placing sheets of grease proof paper between them and leaving in a slightly warm oven till they are all cooked.

4) To serve, lay a pancake on a plate and put some fresh berries along one side, add a few scoops of icecream and then fold the pancake on top to make a semi circle shape with the filling inside. Then drizzle your chosen sauce over the top and sprinkle nuts if you can eat them (optional!).

You can use this basic recipe to make all sorts of pancake flavours e.g fill with bananas and icecream and top with a banoffee sauce - the Lyle's squeezy syrup banoffee sauce is dairy, soya, egg and wheat gluten free and can even be warmed before pouring on!
