Sweet Banana Fritters - dairy free and egg free!

To serve 4:
50g cornflour
50g plain flour
3-4tsp honey
2 bananas
1 tbsp sunflower oil
For serving:
honey, golden syrup, icing sugar, dairy free icecream, dairy free cream.....
1) Mix the cornflour and flour in a bowl, and add a pinch of salt, 2-3 tsps of honey and 100ml of cold water. Whisk to form a smooth batter and then set aside for 15minutes or cover and put in the fridge overnight to thicken.
2) When you are ready to make the fritters, slice both bananas lengthways and then cut them in half again to make 8 pieces in total. For smaller children you may like to make them smaller so make 16 pieces.
3) Heat the oil in a frying pan or wok until hot and hazy. Then dip each banana into the batter and place in the pan, cut side down. Fry over a medium heat for 3-4 minutes, then carefully turn with a spatula and cook for another 3-4minutes on the other side. If you turn them to soon the batter will come away.
4) Remove them from the pan, drain on kitchen paper (briefly - dont leave them there or they stick!) and then serve them warm with your choice of toppings and dips.
