Summer Fruit Meringue Nests - dairy free, egg free, soya free. Kids will love them!!

To make 12 meringue nests you will need:
Loprofin Egg White Replacer (get on prescription from your GP). - Make up 200mls according to pack instructions.
200g caster sugar
200ml Oatly Cream
2 leaves gelatine or equivalent
icing sugar to taste
pack of your fav summer fruits e.g raspberries, strawberries

1) Follow the Loprofin pack instructions and mix up 200ml solution. Once it's cooled, whisk for 10mins on high speed. Very gradually add the caster sugar and whisk on high speed for another 10mins until it's glossy and firm and peaks well.
2) line a baking tray with parchment paper. scoop or pipe the meringue mixture onto the paper and cook in the oven at 140c/275f/gas mark 1 for 1-1.5hours. Once it's cooked, allow to cool then transfer to airtight container.
3) In the meantime, prepare the gelatine leaves according to instructions and once the gelatine is melted, add the Oatly cream to it and mix it well to avoid lumps. Stir in some icing sugar to your taste.
4) put the Oatly mixture in the fridge to thicken for about 6-8 hours.
5) Make your meringue nests by piling some Oatly cream on top of a meringue and putting your chosen summer fruits on top. If you like, you can also serve it with a coulis by putting some of the fruit in a food processor till liquidised and adding some icing sugar to sweeten. You can drizzle this on top of the meringue nest or round the plate.
