Stirfry with Crunchy Crumb
1 thick slice of suitable bread
2 tbsp olive oil
1 broccoli head, chopped into florets
1 large carrot in thin strips
1 red pepper in thin strips
4 anchovy fillets, chopped.
You can add chilli pepper to make it spicer. Or add any other vegetables you like. You can also add pine nuts for extra crunch.
1) whizz bread in a blender to make breadcrumbs.
2) heat 1 tbsp oil in a wok or frying pan and add the breadcrumbs. Stirfry for 4-5minutes till crunchy. put aside.
3) heat the pan again and add the vegetables. Stir fry over a high heat for at least 5 minutes till they begin to soften. Add the anchovies and cook for another 5minutes.
4) serve, scattered with the breadcrumbs for a quick stirfry meal.
Nice with dairy-free garlic bread or pitta / flatbreads breads.
