Rock Buns - dairy free, egg free, wheat free

Ingredients:
150g rice flour
50g dairy free marg/ butter e.g Pure
50g sugar
50g dried fruit (optional)
The equivalent of 1 egg using an egg replacer.
2 Tablespoons rice milk or orange juice
Muffin paper cases
Method:
1) Preheat oven to 180c or Gas 5
2) Put butter and flour in a bowl, and rub in well.
3) Add the sugar and fruit.
4) Add the egg replacer and the milk or orange juice.
5) Mix together the ingredients with a fork to form dough.
6) Place teaspoon of mixture in each case and bake in the oven for 15-20 mins or until golden brown.
7) Remove and cool.
