Quick and Easy French Apple Tart - no dairy or eggs in sight!
1 quantity of shortcrust pastry ( I use Jus-Rol as it is dairy and egg free).
900g/ 2Ib granny smith apples - peeled, and thinly sliced.
1.5 tablespoons lemon juice
1.5 tablespoons caster sugar
6 tablespoons apricot jam
1) preheat oven to 180c / 350f / gas mark 4
2) make pastry and line a tart tin with it. then chill it in the fridge 15minutes before blind baking it till light brown and crisp.
3) toss the apple slices in lemon juice. Then arrange the apple slices onto the baked pastry case in layers. sprinkle each layer with sugar and finish with sugar on the top.
4) bake for 30minutes till apples are tender and golden. watch carefully so it doesn't overcook.
5) melt the jam in a pan and sieve it to remove lumps. leave to cool slightly then use a pastry brush to brush the glaze over the apples, letting it fill any gaps between the apples. leave to set the glaze, before serving.
lovely served with dairy-free icecream or Oatly cream.
