Oriental Chicken with Cashews - soya free!

For 2 people you will need:
2-3 chicken breast portions, cut into stips
1 red onion (or brown onion if its all you have), finely chopped or cut into slices.
1 small broccoli, each floret thinly sliced
Sharwoods Plum Sauce (check product before buying as it has some warnings about being made in a factory with allergens)
a large handful of salted cashew nuts
1) Heat a wok (or large frying pan) with a little olive oil, then add the onion and brown it.
2) Add the chicken strips and the Broccoli slices, and fry, stirring constantly, until the chicken is brown and cooked through. Watch the broccoli doesn't burn.
3) Once the chicken is cooked, add the handful of salted cashew nuts to the wok (add more or less nuts according to your tastes but avoid pouring in any loose salt). Stir whilst frying, for another few minutes.
4) Now add between a third and a half of the jar of Sharwoods plum sauce (according to your tastes) and stir well till fully heated through.
We like this served with rice but you could try serving it with rice noodles or even fajita wraps (unless you are gluten/wheat free).
For a quick meal, you could cook the onion, broccoli and chicken the night before so you only have to reheat it with the cashews and the sauce on the night.
