Oattie chocolate Biscuits - dairy free and egg free!
225g rolled porridge oats
100g self raising flour with 1 tablespoon of baking powder OR use 100g gluten-free flour with 1 teaspoon of gluten-free baking powder
50g dairy-free butter e.g Pure
125g caster sugar
Optional decoration- Dairy free and soya free chocolate e.g Divine / Organica swiss chocolate. or icing
1) grease a baking sheet and preheat oven to 150c / gas mark 3
2) mix together the oats, flour and baking powder.
3) rub in the butter/margarine and add in 100g of the caster sugar.
4) add 2 tablespoons of water and mix to a dough.
5) sprinkle some oats on a surface and roll the dough out on it to 6mm thick. use a biscuit cutter to cut rounds and place on a baking sheet.
6) bake for about 20minutes or till starting to brown round the edges and leave to cool on a wire rack.
7) to decorate, you could sprinkle with sugar, or melt some chocolate (in a bowl over a pan of boiling water)and dip half the biscuit in the chocolate. these look really nice! if you prefer you could ice them by mixing icing sugar with a little water (and flavouring/colouring if your kids prefer).

i just tried this recipe with my children and they loved them. we used lego people cutters and decorated them with faces and melted some chocolate to make clothes.
the only thing i found was that i had to add an extra tablespoon of water as the mixture was a bit too dry to roll out with just 2 tablespoons of water.
really yummy!
