Millet Crunchies - dairy free and gluten free

60g (2oz) dairy and soya free margarine
60g (2oz) light brown sugar
100g (3.5oz) millet flakes
30g (1oz) rice flour
1) preheat the oven to 190c / 375f / gas mark 5 and grease a 7inch / 18cm round baking tin and line it with grease proof paper.
2) Gently melt the margarine in a pan.
3) Mix the millet flakes, rice flour and sugar together in a bowl.
4) Pour the melted margarine onto the millet mixture and mix well.
5) Turn into the baking tin and press down firmly. Bake in the oven for 15-20minutes until pale gold.
6) Cut into sections whilst hot then leave to cool down in the pan.
For an extra party treat, you could spread melted dairy free chocolate over the top and then leave to set.
