Ingredients: 

350g plain flour

1tsp bicarbonate soda

150g caster sugar

110g dairy-free butter or margarine

60g golden syrup

1 egg equivalent using an egg replacer e.g Orgran No-Egg.

6 tablespoons strawberry or raspberry jam

2 tbsp icing sugar

 

 

 

Method: 

1) preheat oven to 180 c / 350f / gas mark 4. grease baking sheets.

2) in a bowl, mix the flour, bicarb, sugar, butter/marg, syrup and the egg replacer.

3) dust with flour and roll out on a board to 5mm thick.

4) use round cutter to cut circles. in half of them you also need to use a small cutter e.g heart ot star or circle to cut a hole in the middle.

5) bake for 12-15minutes.

6) once cooled on wire rack, use a little jam to sandwhich one whole circle with one circle with a hole cut out.

7) sift icing sugar over them
