Garlic Mushrooms - dairy free

serves 4
75ml virgin olive oil
2 garlic cloves, crushed
grated rind and juice of half a lime
1 small red chilli - deseed it and finely chop it.
12 flat mushrooms
1.5 tablespoons parsley - chopped
optional - seasoning, lime wedges to serve
1) combine the oil, garlic, lime, chilli and parsley in a bowl.
2) put the mushrooms, stalk side down, on a grill pan lined with foil. cook under a preheated grill for 4 minutes till they moisten. Then turn the mushrooms over and cook for another 5 minutes.
3) Transfer to a plate and pour the dressing over. Allow to cool before serving.
Serve with lime wedges, salad or even on a slice of toast.
