Egg Free Pancakes

2 cups all purpose flour / or rice flour
1/4 cup of sugar
1.5 tablespoons baking powder (use gluten free if necessary)
1/2 teaspoon salt
2 cups milk alternative e.g rice milk
1/4 cup vegetable oil
1/4 cup orange juice
1/4 cup melted dairy or soya free margarine
1) sift together the flour, baking powder, sugar and salt.
2) in another bowl, whisk together the milk, oil and orange juice and then slowly add in the melted butter.
3) Combine the dry and wet ingredients together and whisk well.
4) Pour 1/2 cup of batter (or to your liking) onto a nonstick frying pan and gently stir it initially to break up some of the bubbles. Then cook till it's dry around the edges, then flip it over to lightly brown the other side.
Serve with maple syrup or try fresh fruit with dairy free ice cream.
