Ingredients: 

For plain scones: 225g / 8oz self raising flour. half teaspoon salt. half teaspoon baking powder. 50g / 2oz Pure margarine. 150ml / quarter pint oat milk (i use Oatly) or rice milk. extra milk for brushing. For sultana scones you also need to add 50g / 2oz sultantas and 25g / 1oz sugar. Other things you could add are dates & walnuts, honey, herbs, apple & cinnamon.

Method: 

1) sift flour and salt into a bowl

2) rub butter into the flour until the mixture is like breadcrumbs

3) If you aren't having plain scones then this is the time to add your other ingredients e.g sultanas and sugar

4) add the milk and mix to a dough with a knife- i tend to add a bit at a time so it doesn't get too sticky or it will be difficult to knead

5) turn onto a lightly floured surface and knead till smooth

6) roll out to 1cm thick and use a round biscuit cutter to cut into 8-12 rounds depending on size of cutter).

7) transfer to a greased baking sheet and brush the tops with milk

8) bake at 230c/450f/gas mark 8 (or bit less for fan assisted) for about 7-10mins till golden and risen. But check regularly!

9) allow to cool on wire rack. They are at their best warm with butter or jam!

I tried making these this morning for breakfast and added a ripe banana mashed up to get some fruit into my children. It worked well and wasn't too strong a banana taste. nicest warm. if you can eat gluten then you can get some supermarket scone mixes that are dairy and egg free and its really quick then to add banana and only10minutes to cook.

I made these with banana and also added Kara coconut milk instead of oat milk so they were gluten free. they were nice.
