Crushed Jersey Royals with Rosemary and garlic
These are a great accompaniement to any meal - we've tried it with steak, burgers in a bun and served them at BBQs.
To make enough for 4 people:
4tbsp olive oil
3 cloves of crushed garlic
5 -6 sprigs of fresh rosemary
500g Jersey Royals
1. Preheat the oven to 200c / fan assisted 180c / gas mark 6.
2. In a pan, heat the oil. Add the crushed garlic and 4 or 5 rosemary sprigs. Cook for 3 - 4 minutes and then remove from the heat. Leave in the pan for 20-30minutes.
3. Put the potatoes in a pan and bring to the boil, then simmer for 7 minutes.
4. Drain the potatoes and lightly smash / crush with a masher. Transfer them to a roasting tray.
5. Remove the rosemary sprigs from the oil and tip the oil over the potatoes. Finely chop the leaves from the remaining sprig of rosemary and add to the baking tray.
6. Place the tray in the oven to roast for 20-30minutes or place on a hot BBQ for 20-30minutes but shake the pan regularly to prevent sticking.
