Ingredients: 

200g fresh crabmeat

2 spring onions chopped

1-2 red chillies, seeded and chopped

grated zest of 1 lime

4 tbsp freshly chopped coriander

40g of suitable breadcrumbs (blend your own safe bread at home).

1 tbsp oil

1 tbsp plain flour (gluten free if necessary)

1 lime in wedges to serve.

Method: 

1) put the crabmeat in a bowl and add the spring onions, chillies, lime zest and coriander. Mix well and then add the breadcrumbs.

2) Mix again and form into four small patties.

3) heat oil in a pan and dip the patties into flour on both sides. Fry each side for about 3 minutes.

4) serve with the lime wedges.

Nice with salad or potatoes or kids may like rice noodles.
