Coriander Lamb Kebabs - dairy and gluten free
3 tablespoons chopped coriander
juice and rind from 1 lime
1 level teaspoon sugar
1 tablespoon olive oil
seasoning
450g / 1IB cubed lamb
The couscous does contain wheat and gluten so omit this part of the recipe if you are avoiding these foods and serve with an alternative like salad:
For the cous cous:
225g / 8oz couscous (or a suitable alternative like rice or salad)
8 cherry tomatoes chopped
2 sliced spring onions
half a small red onion - chopped
1 lime
bunch chopped coriander
1) place the coriander, lime juice, rind, sugar and oil in a bowl. Season it.
2) Mix into this the lamb. The thread the lamb onto 3 skewers and grill for 8-10 minutes. Occasionally baste with more marinade whilst cooking.
3) Pour 400ml / 14floz boiling water over the couscous and bring to boil then leave to stand for 5minutes. Mix in the reminaing ingredients and serve with the kebabs.
