Chocolate Puddings - dairy free, egg free and gluten free
1 sachet powdered gelatine
500mls of a dairy free cream e.g Oatly Organic dairy free alternative to cream, or another sort if you can't eat oats.
125ml dairy free milk e.g Oatly oat drink or rice dream.
1tsp vanilla extract
100g caster sugar
50-60g dairy free chocolate - either use plain (dairy free) or try the white and couverture from Organica which is free from dairy.
1) Put the gelatine powder into a small bowl, cover with 3 tablespoons of cold water and then leave to ssoak for 5minutes. After the 5 minutes, either stand it in a small bowl of simmering water and allow to dissolve or microwave for 30seconds and then stir until dissolved.
2) Put the cream and milk, vanilla extract, and sugar into a pan and heat to a simmer. Stir until the sugar has dissolved. Remove from the heat.
3) Stir the liquid gelatine into the cream / milk mixture and then add the chocolate - stir until fully melted.
4) Pour into a jug through a sieve and then pour into glasses or moulds.
5) Put in the fridge for 4-6 hours until set.
You can vary this dessert by changing the chocolate - dark, white or couverture (by Organica) or by changing toppings , we've tried these: sprinkle on some nuts, grate on some chocolate, add a small amount of fresh orange juice to the mix so its chocolate orange flavour, top with raspberries..... all of these taste good.
