Chicken Satay - without soy sauce.
2 medium boneless chicken breasts 4 tablespoons of crunchy peanut butter 200 ml coconut cream half lemon (or 1 tablespoon lemon juice) optional: 2 teaspoons of Worcestershire Sauce if you are able to have the ingredients. Serve with rice, naan or anything else your children like.
1) Trim fat from the chicken breasts and place between two sheets of cling film and firmly hit it with a rolling pin until it is flattened out thin. Cut each chicken breast in half. 2) use a fork to mix the coconut cream and peanut butter in a bowl. 3) pour half the mixture into a shallow bowl and add the chicken. turn till fully coated. 4) threat a skewer through each piece chicken. 5) place under a preheated grill for about 5 minutes on each side - till cooked. 6) add a few tablespoons of water ot the remaining satay sauce (the half you didn't use to coat the chicken) and heat on low temperature. add the lemon juice to this sauce. 7)serve with the remaining dip. you could serve with rice, naan's or anything else your kids enjoy.
