Chicken and Chorizo Casserole - slow cooker method!
4 chicken breasts
2 tins chopped tomatoes
1 large onion, chopped
chorizo sausage chopped (check ingredients carefully as some contain dairy)
450g/1Ib potatoes (small new pototoes or chop up large potatoes)
pitted black olives (optional)
1-2 tsp chilli powder
2 cloves garlic, crushed
1 tbsp tomto puree
250ml / half a pint chicken stock (check ingredients for dairy and wheat gluten)
1) brown the onion in a large pan with a little oil. Add the chicken breasts and brown on both sides.
2) Add the chorizo chunks and fry for about 3 minutes till the juices start to come out. Now add some chilli powder according to how spicy you want it.
3) Put the meat, along with all other ingredients (except olives) in the slow cooker and cook on low for about 8 hours. Add the olives 30minutes before serving.
