Ingredients:

4oz brown sugar.

1 lemon-rind and juice.

half tsp cinnamon.

8 tbsp sunflower oil or equivalent.

7oz buckwheat/corn flour.

1tsp baking powder (what free if preferred).

4oz carrot - finely grated.

1tbsp water.

1 orange rind and orange juice.

Icing sugar.

Method: 

Directions

1) preheat oven to 180c

2) beat sugar, lemon rind, lemon juice and cinnamon and oil

3) Mix in the flour, baking powder, carrot and water.

4) oil a loaf tin

5) bake for 45 mins

6) cool slightly then turn out

7) mix orange rind, orange juice and icing sugar and spread on cake when cold

I have made this the only thing i found was I needed to add more water than stated. It's turned out great. Thanks for putting the recipe on.
