Carrot and Coriander Soup

if you are looking for a soup that doesn't contain any diary then you could try making this one. It isn't strong and my son really likes it. 50g/2oz dairy-free butter (i use Pure sunflower spread). 3 sliced leeks. 450g / 1Ib sliced carrots. 15ml / 1 tablespoon of ground coriander. 1.2 litres / 2 pints of chicken stock (homemade or cubed). 30-45ml / 2-3 tablespoons fresh coriander to garnish (optional). Instructions: 1)melt butter in pan and add leeks and carrots. cover and cook for 10minutes 2)stir in ground coriander and cook for 1 minute 3)pour in the stock and bring to the boil. 4)cover and simmer for 20minutes till leek and carrots are tender. 5)cool slightly then puree the soup in a blender. 6)You can then add some Oatly cream if you'd like. 7)reheat again but don't boil. 8)then serve with chopped coriander for garnish
