Beef Stroganoff - dairy and soya free!
serves 4 350g rump steak, thin strips
75g dairy-free margarine
1 onion, thinly sliced 225g mushrooms or button mushrooms
100ml beef or chicken stock
75ml Oatly cream 75ml dairy-free milk e.g oat or rice milk
30ml grainy mustard
Optional herbs:
1 tablespoon chopped tarragon
1 tablespoon chopped chives
Serving suggestions: pasta rice baked potato
1) heat 50g margarine in a frying pan till hot and then add the stead strips for about 3 minutes.
2) heat the rest of hte margarine in the pan and add the onions and mushrooms. Cook for 3 minutes, then add the stock, cream and milk and simmer till the sauce thickens.
3) stir in the mustard and add the tarragon. season if you like.
4) put the beef into the sauce and reheat till the meat is hot and cooked. sprinkle with the chives and serve.
