Beef Casserole - Slow Cooker Method
Piece of Beef
Vegetable Stock
1 tsp marmite (optional depending on your tastes and dietary restrictions)
vegetables (best ones are carrots, swede, parsnips, onion, turnip, mushrooms)
half a can of sweetcorn
mixed herbs
small can of red kidney beans (option)
1) Choose a piece of beef that will fit in your slow cooker and brown the beef quickly in a little oil in a pan to seal it.
2) Move the beef to the slow cooker and pour the vegetable stock over the beef and add the marmite if you choose to.
3) chop the vegetables and add them to the pot. Add the sweetcorn and kidney beans (optional).
4) Give everything a stir and add a pinch of mixed herbs. Put the slow cooker on high or low depending on your needs.
You may want to thicken the sauce slightly just before serving - you could use a little flour.
Serve on its own, with some other vegetables e.g broccoli, or with a baked potato.
