Banana Bread / Cake (dairy and egg free)

This recipe is delicious! we eat it like cake but you can serve it like bread with butter on it. 200g / 7oz self raising flour. quarter teaspoon of bicarbonate of soda. 75g / 3oz dairy-free butter (I use the sunflower Pure). 175g / 6 oz caster or brown sugar. 450g / 1Ib mashed banana's (usually around 4-5 bananas). some coarsely chopped nuts - i like it with walnuts (optional). You also need some egg-replacer - you need the equivalent of 2 eggs (I use the Orgran No egg replacer - you can buy it at healthfood shops or online: http://www.goodnessdirect.co.uk/cgi-local/frameset/detail/316644_Orgran_...)
instructions: grease and line a loaf tin. sift flour and bicarbonate of soda together. cream the butter and sugar together till pale and fluffy. add egg replacer a bit at a time and beat well after each addition. add mashed banana's and beat again. stir in the flour and the nuts. pour into tin and bake on 180c / 350f for about 75minutes (check after an hour if your oven is hot!)
